Coffee Cupcakes with Vanilla FrostingI found these little silicone cupcake cases in poundland! I felt the need to create a hot-drink inspired cupcake to go with them!
Recipe Coffee Cake (Makes 6) 1 egg 1/2 cup oil 1/2 cup milk 3/4 cup flour 1/2 cup sugar 1 tsp baking powder 1/4 tsp salt 1 tbsp instant coffee, dissolved in a little hot water. Sift dry ingredients, then combine with wet ingredients. Whisk until smooth (don't overmix!). Fill containers 3/4 full and bake at 180 degrees for approx 20 minutes until browned. For frosting; 1/2 cup butter 1/4 cup milk 1 tsp vanilla extract (don't use essence!) Lots of icing sugar (I never measure mine - just add enough until the frosting holds its shape!) I also then dusted the top with hot chocolate to make a cappachino! |
